Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Stir in the shredded cheddar cheese, cooked ham, bell peppers, green onions, hash browns, tomatoes, garlic powder, onion powder, and paprika.
Pour the egg mixture into the prepped baking dish, spreading it out evenly.
Bake in the preheated oven for 35-40 minutes, until the eggs are set and the top is golden brown.
Allow the casserole to cool for a few minutes before slicing and serving.
Variations & Tips
For a veggie-lover’s version, omit the ham and load up on extra vegetables like spinach, mushrooms, or zucchini. If you have picky eaters at home, consider creating a ‘build-your-own’ casserole by setting out bowls of various ingredients and letting family members add their own favorites before baking. You can also substitute the cheese with different varieties like pepper jack for a spicy kick or Swiss for a creamy texture. And for a bit of crunch, top the casserole with crushed cornflakes or breadcrumbs before baking.
