Spinach and Potato Soup

Ingredients (for 4-6 servings):

For the Soup:
1 tablespoon olive oil or butter
1 medium onion, chopped
2 cloves garlic, minced
4 medium potatoes (about 1 lb or 450g), peeled and diced
6 cups vegetable broth (or chicken broth)
4 cups fresh spinach leaves (roughly chopped)
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary (optional)
Salt and freshly ground black pepper (to taste)
1/2 cup heavy cream or coconut milk (for a dairy-free version)
1 tablespoon lemon juice (optional, for brightness)
For Garnish:
Fresh parsley, chopped (optional)
Grated Parmesan cheese (optional, for garnish)
