The secret is to first soak the potatoes in cold water to help remove their starch. Then, you’ll bake them at two temperatures – much like double-fried French fries – to ensure they’re tender on the inside and crispy and golden on the outside.
These oven fries are a great side to a wide variety of dishes. Consider serving them alongside a pan-cooked fish fillet, for a healthier play on fish and chips. Serve with a side of ketchup, mayonnaise, or malt vinegar for dipping.
