This recipe came into my repertoire during hectic days at the office when there was barely time to breathe, let alone cook! The slow cooker does most of the heavy lifting, transforming simple ingredients into comforting, cheesy enchiladas that will make you feel like you’re dining at your favorite Mexican restaurant. Plus, who doesn’t love coming home to the aroma of a ready-made meal?
These enchiladas are wonderful with a side of Spanish rice or a fresh, zesty cilantro-lime salad. For a heartier meal, add some refried beans or a corn salsa on the side. And don’t forget the tortilla chips with guacamole – they’re perfect for scooping up any extra sauce!
Slow Cooker Cream Cheese Enchiladas

Ingredients
1 lb ground beef or ground turkey
1 packet taco seasoning
1 can (10 oz) enchilada sauce
1 can (4 oz) diced green chilies
1 package (8 oz) cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
8 flour tortillas (8-inch size)
1 can (10 oz) red or green enchilada sauce
Fresh cilantro for garnish (optional)
