Golden Parmesan Potatoes with a Garlic Twist

 

Directions:

  1. Preheat the Oven: Preheat your oven to 200°C (400°F).
  2. Prepare the Potatoes: Wash and peel the potatoes. Cut them into thin slices or wedges, depending on your preference.
  3. Season the Potatoes: In a large bowl, combine the potato slices with minced garlic, a generous amount of grated Parmesan cheese, a sprinkle of oregano, and a pinch of red pepper powder. Mix well to ensure each potato slice is coated.
  4. Coat the Potatoes: Add a few tablespoons of corn starch or potato starch to the bowl. Toss the potatoes until they are lightly coated. Drizzle some olive oil over the potatoes and mix well.
  5. Bread the Potatoes: Spread bread crumbs on a plate. Press each potato slice into the bread crumbs to coat both sides.
  6. Bake the Potatoes: Arrange the coated potato slices on a baking sheet lined with parchment paper. Make sure they are not overlapping. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  7. Prepare the Cheese Sauce (Optional): While the potatoes are baking, prepare a simple cheese sauce by melting butter in a saucepan, adding flour to make a roux, then gradually whisking in milk until the sauce thickens. Add grated Parmesan cheese to the sauce and stir until smooth. Season with salt and pepper to taste.
