Homemade Meatballs and Gravy

Step 1: Make the Meatballs
Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or beef and pork mixture), breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, salt, pepper, oregano, basil, and milk. Mix everything together gently until well combined. Be careful not to overwork the meat, as this can make the meatballs tough.

Form the Meatballs: Using your hands, roll the mixture into balls, about 1 to 1.5 inches in diameter. Place them on a plate or tray.

Cook the Meatballs: In a large skillet, heat a little oil over medium heat. Add the meatballs in batches, being careful not to overcrowd the pan. Brown the meatballs on all sides for about 5-7 minutes. They don’t need to be fully cooked through at this point, as they’ll finish cooking in the gravy. Remove the meatballs from the skillet and set them aside.

Step 2: Make the Gravy Sauté the Onion and Garlic: In the same skillet, add butter and melt over medium heat. Add the chopped onion and garlic, cooking until the onions are soft and translucent, about 4-5 minutes.

Make the Roux: Stir in the flour and cook for about 1-2 minutes to form a roux (this thickens the gravy). Be sure to stir constantly to avoid lumps.

Add the Broth: Slowly pour in the beef broth, stirring continuously to avoid lumps. Bring the mixture to a simmer. If you prefer a creamy gravy, add the heavy cream at this point.

Simmer: Once the gravy has thickened slightly, return the meatballs to the skillet. Spoon some gravy over them. Cover the skillet and simmer for 15-20 minutes, until the meatballs are cooked through and tender.

Step 3: Serve
Taste the gravy and adjust seasoning with salt and pepper if needed.
Garnish with fresh parsley before serving.
