Ingredients
1 lb fresh asparagus, trimmed and cut into 2-inch pieces
8 oz mushrooms, sliced
2 tablespoons olive oil
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste
Optional: 1 tablespoon balsamic vinegar or lemon juice for a zesty finish
Directions
1. Heat the olive oil in a large skillet over medium heat.
2. Add the minced garlic and sauté for about 30 seconds, until aromatic.
3. Increase the heat to medium-high and add the mushrooms, sautéing until they begin to brown and release their moisture, about 5 minutes.
4. Add the asparagus to the skillet, seasoning with salt and pepper. Continue to cook, stirring occasionally, until the asparagus is tender but still slightly crisp, about 4-5 minutes.
5. For a zesty flavor, stir in balsamic vinegar or a squeeze of lemon juice just before serving, if desired.
6. Serve immediately while hot.
Variations & Tips
For a different twist on this recipe, consider adding a splash of white wine while the mushrooms cook, giving them a subtle, nuanced flavor. Additionally, you can incorporate other vegetables such as bell peppers or onions for more complexity. Sprinkle parmesan cheese or toasted almonds on top for an extra layer of flavor and texture.
