One of my faves to make during summer time! Delish!


4 cups mixed berries (fresh or frozen)
1 cup granulated sugar
1 cup all-purpose flour
1 cup milk
1/2 cup unsalted butter, melted
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Optional: 1 tablespoon cornstarch (for thickening if using frozen berries)
Directions
Lightly grease the inside of your slow cooker with cooking spray or a small amount of butter.
In a large bowl, gently toss the berries with 1/4 cup of the sugar. If using frozen berries, mix in the cornstarch to help thicken the juices as they cook.
In another bowl, whisk together the remaining sugar, flour, baking powder, and salt.
Add the milk, melted butter, and vanilla extract to the dry ingredients, stirring until just combined. The batter should be slightly lumpy.
Pour the batter into the prepared slow cooker, spreading it out evenly.
Spoon the berry mixture evenly over the top of the batter. Do not stir.
Cover and cook on High for 2 to 2.5 hours, or until the top is golden brown and a toothpick inserted into the cake portion comes out clean.
Once done, turn off the slow cooker and let the cobbler set for about 15 minutes before serving
