Preheat the Oven: Start by preheating your oven to 375°F (190°C).
Cook the Sausage: In a pan, cook the Italian sausage according to package instructions. Crumble the cooked sausage and set aside.
Prepare the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, beaten egg, chopped parsley, dried basil, garlic powder, salt, and pepper. Mix well until everything is incorporated.
Assemble the Roll-Ups: Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
Fill and Roll the Noodles: Lay out the cooked lasagna noodles on a clean work surface. Spread about 2 tablespoons of the cheese mixture onto each noodle. Top the cheese mixture with another 2 tablespoons of cooked sausage. Carefully roll up each noodle, seam-side down.
Bake the Lasagna Roll-Ups: Place the rolled-up noodles seam-side down in the prepared baking dish with marinara sauce.
Top and Bake: Pour the remaining marinara sauce over the roll-ups. Sprinkle the remaining mozzarella cheese (1 cup) and Parmesan cheese (½ cup) over the top.
Bake with Foil: Cover the baking dish with aluminum foil and bake for 25 minutes.
Brown the Cheese: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Cool and Serve: Let the lasagna roll-ups cool for a few minutes before serving and enjoy!
