Vegan Cabbage Soup
Ingredients:
- 1 head of green cabbage, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 stalks of celery, diced
- 4 cloves of garlic, minced
- 1 can of diced tomatoes (14.5 oz)
- 4 cups of vegetable broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook for 5-7 minutes, or until the vegetables are soft and fragrant.
- Add the cabbage to the pot and cook for another 5 minutes, stirring occasionally.
- Add the diced tomatoes, vegetable broth, thyme, oregano, paprika, salt, and pepper to the pot. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the cabbage is tender.
- Taste and adjust the seasoning as needed. Serve hot, garnished with fresh parsley if desired.
