Directions
1. In a large pot, melt the butter over medium heat.
2. Add the diced tomatoes to the pot, including the juice, and bring to a simmer.
3. Stir in the heavy cream and let the soup simmer for about 10 minutes, allowing the flavors to meld together.
4. Use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches.
5. Season with salt and pepper to taste, and serve hot.
Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes while the soup is simmering. If you have picky eaters, try adding a handful of grated Parmesan cheese for extra flavor. You can also toss in some fresh basil leaves before blending for a fragrant twist. For a heartier version, stir in some cooked rice or small pasta shapes before serving.
