What a clever idea! I’ve never tried this combo before but it turned out great! Making it again tmrw!

1. In a bowl, mix together 2 eggs, salt, pepper, and minced garlic.
2. Add 1.5 cups of mozzarella cheese and 2 tablespoons of mayonnaise to the egg mixture. Mix until well combined.
3. Gently fold in 2 tablespoons of sifted plain flour until the batter is smooth.
4. Coat a pan with olive oil and heat it over medium heat.
5. Spoon out the egg mixture into the pan, forming patties that are not too thick but roughly the same size as the tomato slices.
6. Top each egg patty with a tomato slice and another spoonful of the egg mixture.
7. Cover the pan and cook on low for approximately 3-4 minutes or until the bottom layer is done. The egg mixture will slowly spread out as it cooks turning into 1 giant patty.
8. Carefully flip everything using a spatula (a plate can be helpful in flipping without you breaking the structure) and cook the other side covered for another 3-4 minutes or until cooked through and golden brown.
9. Remove from the heat and the pan. If desired, garnish with dried oregano and freshly chopped chives.
