Fry the meat: Heat oil in a pan and fry the game until it is brown. Add the onion and garlic and fry briefly.
Add the mushrooms: Add the mushrooms and cook everything for a few minutes until the mushrooms are soft.
Prepare the sauce: Add the cream and mustard. Season with salt, pepper and fresh herbs. Mix everything well and simmer briefly until the sauce thickens a little.
Prepare the puff pastry: Roll out the puff pastry on a baking tray and put the filling in the middle. Fold the edges of the dough over the filling and press down well.
Brush: Whisk the egg yolk and brush the dough with it.
Bake: Bake in a preheated oven at 200°C (fan oven) for about 20-25 minutes until the dough is golden brown.
Serve: Allow the cake to cool slightly and cut into pieces. Garnish with fresh herbs.
