Best Ever Beef and Barley Soup

Perfect for a cold winter day, this hearty soup is packed with amazing flavor, making it a family favorite. It’s healthy, filling, and freezes well for later!

Ingredients:

  • 1 pound boneless chuck roast, trimmed and cut into 1/2-inch pieces
  • 1 1/2 cups carrots, thinly sliced
  • 1 1/2 cups celery, thinly sliced
  • 2/3 cup onion, chopped
  • 1 (8-ounce) package pre-sliced mushrooms
  • 2 tablespoons beef base (not broth – this is a concentrated base to make broth)
  • 8-10 cups water
  • 1 large bay leaf
  • 1/2 cup pearl barley
  • Salt and pepper, to taste

Instructions:

  1. Brown the Beef:
    Heat a non-stick frying pan over medium heat. Add the beef pieces and cook until browned, stirring frequently. Remove from the pan and transfer to a crockpot.
