Sometimes there’s nothing better than a hot steaming bowl of chili. There’s something so comforting about beans, meat, and maybe even a few veggies all swaddled up in a tomato base. The recipe below can be done with either ground beef or turkey (if you are looking for a healthier version).
The ground meat in this recipe does need to be browned first before going into the slow cooker. Not only does it give it a bit more flavor, but it also helps it to stand up to the long slow cooking time, keeping it separated instead of just cooking into one huge turkey mess. After that, feel free to just dump everything in and cut up some bread for mopping up all that goodness!
INGREDIENTS:
2 tablespoons olive oil
2 pounds ground beef or turkey
1 small onion, chopped
1 can diced tomatoes, with juices
1 can crushed tomatoes
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can navy beans, drained and rinsed
1 cup whole kernel corn
1 yellow pepper, chopped
2 tablespoons chili powder
1 tablespoon cumin
Salt, to taste
Freshly ground black pepper, to taste
